Using gourmet Greek yoghurt as the foundation adds a rich, tangy depth, while keeping things light with fat free Greek yoghurt makes it perfect for everyday eating. Whether you’re already enjoying muesli and yoghurt for breakfast or exploring new ways to use yoghurt in savoury dishes, this recipe is a delicious way to switch things up and enjoy the versatility and plain yoghurt benefits in a more indulgent way.

To serve:
1. Prepare the chicken
Place the chicken breast in a ziplock bag or between two sheets of baking paper. Gently flatten to an even thickness (about 2cm) using a rolling pin or meat mallet.
2. Marinate for flavour
Mix the olive oil, garlic, lemon zest, salt, pepper, smoked paprika and oregano. Rub the marinade evenly over the chicken. Cover and refrigerate for at least 2 hours, or overnight for deeper flavour.
3. Cook the chicken
Preheat your air fryer to 200°C. Cook the chicken for 4–5 minutes per side, or until fully cooked through. Remove and allow to rest for 5 minutes before slicing.
4. Make the yoghurt base
In a bowl, combine the fat free Greek yoghurt, cucumber, lemon juice, zest, garlic and mint. Season to taste. This creamy base is what gives the dish its signature freshness and showcases the versatility of plain yoghurt benefits in savoury cooking.
5. Assemble the bowl
Spread the yoghurt mixture onto the base of a plate or bowl. Top with sliced chicken, avocado cubes and pickled red onions.
6. Serve immediately
